You guys know that I’m a sucker for the goofy holidays and trends to celebrate. It makes my homeschool planning much more fun with the kids. After I posted this POST about celebrating National Egg Month a friend of mine emailed me a list of all the quirky and strange holidays that I could celebrate. I think I just like an excuse to theme our days from time to time.
And May is NATIONAL SALAD MONTH which it fitting because everything in our garden is starting to sprout up and make my mouth water for all the fresh fruits and vegetables of the summer. Our Garden Day is an annual tradition that we look forward to every year. We will have sliced tomatoes at every meal and squash every day all summer long. I don’t complain about cooking in the summer because it is actually fun with a grill fired up and all the in season fresh fruits and vegetables. It’s much more fun to cook, eat, and shop for all the fresh ingredients!
I have tons of recipes for summer salads that I love and could eat every day. I shared this one with you this week. Yum! I love a salad with fresh fruit and nuts on it. Nuts add crunch and flavor while fruits add the perfect sweetness. Spring and summer are the best seasons for a good salad.
This week, I was running errands in town and had to eat out for lunch. (You call it going to “town” when you live rurally with cows and chickens and head to the closest city with a walmart.)
So, I opted for getting my favorite McDonald’s salad which is the Southwest Grilled Chicken salad.
It is a bed of crisp chopped romaine, baby spinach, baby kale, red leaf lettuce and ribbon cut carrots topped with their artisan grilled chicken and layered with black beans, roasted corn and tomatoes, and poblano peppers. Did you know their chicken is made with 100% chicken breast filet with no artificial preservatives, flavors or colors?! The salad is sprinkled with cheddar and jack cheeses, chili-lime tortilla strips and cilantro. I LOVE cilantro, so anything with cilantro on it is usually a selling point for me when I order something.
I try growing it every year, but always manage to kill it somehow. So, getting it at restaurants is a must for me. I am trying really hard to keep my cilantro alive this year!
The McDonald’s Southwest Grilled Chicken salad is only 350 calories so it’s a great choice when eating fast food out and still working on making good choices and being healthy.
Speaking of making good healthy choices, I’ve been working this year to get back to pre-baby weight. I started running back in January as soon as my doctor released me to run post c-section. (That’s a lie, I was running 2 weeks before I got the official release. oops)
And I MADE IT! Woo Hoo! My goal was to be pre-baby weight 4 months post baby, but that didn’t happen. It was 5 months before I met my goal. But, that’s okay!
